MAKES ABOUT 1½ CUPS
1 cup plain whole-milk yogurt
Flavoring ingredients of choice (see below)
Kosher salt
Black or white pepper in a mill
Put the yogurt in a medium bowl, prepare and add the flavoring ingredients you've chosen, and mix together.
Taste, season with salt and pepper, and mix well. Use immediately, or refrigerate, covered, for up to 3 days.
Ingredient Combinations
CILANTRO-MINT RAITA: Add ¼ cup chopped fresh cilantro, 1 tablespoon shredded mint, 1 minced serrano chile, 1 minced garlic clove, and 1 teaspoon grated fresh ginger to the yogurt.
